Production process of salted straw mushrooms:
– Boil water, drop fresh mushrooms in to blanch for about 5-7 minutes, take out mushrooms and drop in cold water, pour mushrooms into basket to drain;
– Put the blanched mushrooms into non-perforated nylon bags, jars, plastic valves… For each layer of mushrooms, a layer of salt at the ratio of 1kg of mushrooms + 0.3kg of small-grained dry salt + 0.2 liters of saturated salt solution ;
– Fill the mushrooms with salted utensils, cover with a layer of dry salt on the surface to submerge the mushrooms in the salt water, avoiding mold growth.
– For 1-2 months or more, you need to add 3-4kg of citric acid for 1 ton of mushrooms. After 15 days of salting, the mushrooms will be stable in quality, then classify or peel the mushrooms. Good quality salted mushrooms are: no mold, pleasant aroma, salt concentration reaches 230Be, pH=4, the mushroom is solid, not crushed, not mixed with other impurities, color of salt solution transparent. Mushroom buyers will pour out the mushrooms to drain completely and then weigh the mushrooms, the remaining salt solution (to preserve mushrooms in brine).
– The ratio of salted mushrooms to fresh mushrooms is about 60-70%.
Straw mushroom is cool, sweet, has the effect of supplementing the spleen, helping gas, clearing heat, lowering blood pressure, fighting all kinds of tumors. Straw mushrooms can be processed separately to eat or used in combination with other medicinal dishes.
