What is Sucralose?
Sucralose is a reducing sugar with chemical formula C12H19Cl3O8, international nomenclature 1,6-Dichloro-1,6-dideoxy-β-D-fructofuranosyl-4-chloro-4-deoxy-α-D-galactopyranoside name also known as 1′,4,6′- trichlorogalactosucrose, trichlorosucrose.
Sucralose is produced from sucrose by dechlorination in a high temperature, low pH environment to substitute three chlorine atoms for three hydroxyl groups. In 1980, Tate & Lyle Ltd. joined hands with Johnson & Johnson Corporation – a large corporation in nutrition and health care, to establish McNeil company to commercialize sucralose. McNeil mixed sucralose with maltodexin and dextrose (both sugars are produced from corn) to create a sugar substitute for the well-known brand Splenda. In addition, sucralose is also available under other trade names such as: Sukrana, SucraPlus, Candys, Cukren and Nevella.
